This is a great breakfast meal for yourself, family or co-workers and just about the easiest thing to make.  This time I was making vegan slow cooker steel cut oatmeal for my IT development team. The recipe I use only has six ingredients: steel cut oats in the center and right to left dried cranberries (cranraisins), dried Bing cherries, dried dates, brown sugar and water. I usually make a non-vegan version with milk, but one of my co-workers is not a big milk fan. So this is a vegan experiment. It will be interesting to see the results. In 8 hours we will see how it tastes. This might be something even my vegan cousins can make.

The portions are easy as it is 1 cup steel cut oats to 3 to 4 cups of water.  Then I add another cup combination of dried fruits.

Mixing in the initial portion of the ingredients.  Be careful on the amount of cherries you add as they can overpower the flavor and it will taste like a bowl full of cherries.

I doubled the recipe to fill up the slow cooker.  So this time it had 2 cups of steel cut oats, 8 cups of water and 2 cups of mixed dried fruits.

Set the slow cooker to low and 8 hours later it is all done.  Just give it a little stir before serving.

I would like to give credit to Alton Brown’s recipe from the food network.  I saw him cook this on his show and I just had to try it many years ago.  I have been varying the recipe ever since.
