Water Spinach – Green

We first had this “water spinach” at a local restaurant where we typically get their mustard greens special.  It was really good and now is my new go to green side.  There is a green version and a white version.  This is the green one and it was a bit more expensive than the white version.

The Water Spinach usually comes in a very large bag like 18 inches.  This bag was 1.5 lbs worth at $2.49 per lb.

The water spinach should be thoroughly washed and I cut it into pieces 4 to 6 inches.  Plus you could eat the stalks, but it is  up to you.  We tried but with stalks and without.  We preferred not eating that bottom 4 inches.
